VEGAN SWEET POTATO BUDDHA BOWL

INGREDIENTS
FOR THE LEMON TAHINI SAUCE
5 tbsp tahini
3 tbsp each water and fresh lemon juice
1 tbsp pure maple syrup
1 tsp each garlic powder and sea salt
FOR THE RED CABBAGE
1 small red cabbage, thinly sliced, preferably with a mandolin
1/4 cup vinegar of choice (white, apple cider, red wine, white wine or balsamic)
2 tsp organic cane sugar (any white sugar works)
1/2 tsp sea salt
FOR THE SALAD BOWLS (PER SERVING)
half a baked sweet potato
handful of fresh spinach
1/2 an avocado, diced
2 tbsp hummus - optional
handful of fresh sprouts of choice
1/2 cup cooked lentils of choice
handful of chopped fresh cilantro
salt and pepper, to taste
