Strawberry & Cacao Oat Cookies


Makes 16 cookies


Ingredients

280g Macro organic rolled oats (save 25g for later) 2 organic bananas, roughly chopped 1/4 cup maple syrup 1 tsp ground cinnamon 1 free range egg 250g strawberries, hulled, quartered, sliced 2 tbs cacao nibs


Method

Step 1

Preheat oven to 200°C/180°C fan-forced. Line two large baking trays with baking paper.


Step 2

Place rolled oats in a food processor and process until very finely chopped.


Step 3

Place banana in a medium bowl and mash with a fork until smooth. Add syrup, cinnamon and egg, then stir to combine.


Step 4

Add processed oats, strawberry and half of the cacao nibs to banana mixture and stir to combine.


Step 5

Roll 2 tablespoonfuls of mixture into balls, place on trays and press down to form 5cm rounds. Sprinkle with extra oats and remaining cacao nibs. Bake for 35 minutes or until golden. Allow to cool on trays completely. Serve.
