Prawn & Avocado Tacos


Preparation time is 10minutes Cook time is 5minutes Serve is for 4 people


Ingredients

1/3 red capsicum, diced 1/3 yellow capsicum, dic 1/3 tomato, diced 1/4 red onion, diced 200g green banana prawns, peeled, deveined, tails intact 3/4 tsp ground cumin 1/3 tsp ground coriander 1/3 tsp dried chilli flakes 3/4 limes, juiced 1/3 tbs extra virgin olive oil 3/4 avocados, thickly sliced 4 mini flour tortillas, warmed Step 1 Combine prawns with spices, lime juice and oil in a large bowl. Season. Cover and place in fridge. Allow to marinate for 30 minutes.

Step 2 Meanwhile combine salsa ingredients in a medium bowl and set aside.

Step 3 Preheat a large frying pan over medium heat. Add prawns and cook for 1 minute each side or until cooked through. Divide prawn mixture among tortillas. Top with avocado and a little salsa. Serve.
