Mixed berry oat bars

Ingredients

  • 2 cups (180g) rolled oats

  • 2 large ripe bananas, mashed

  • 240g can light coconut milk

  • 1 tsp ground cinnamon

  • 2 tbs sugar-free maple-flavoured syrup

  • 1 cup (150g) frozen mixed berries

  • 2/3 cup (75g) unsalted walnuts, chopped

  • 20g Coles No Added Sugar Dark Chocolate, melted

Method

STEP 1 Preheat oven to 180°C. Grease a 19cm x 29cm slice pan and line with baking paper. Combine the oats, banana, coconut milk, cinnamon, maple-flavoured syrup and half the mixed berries in a bowl. Pour into the prepared pan. Sprinkle with the walnut and remaining mixed berries and press into the surface slightly. STEP 2 Bake for 30-35 mins or until light golden and firm to the touch. Set aside in the pan to cool slightly. Cut into pieces. Drizzle with chocolate and set aside to stand until set.
