Healthier Chilli & Thai Basil Stir-fry Noodles


Ingredients

Serves 4

200g vermicelli noodles 1 tbs sesame oil 500g chicken mince 2 long red chillies, 1 finely chopped, 1 thinly sliced 2cm piece ginger, finely grated 3 cloves garlic, crushed 2 limes, 1 zested and juiced, 1 sliced into wedges 3 bunches broccolini, cut into thirds 1 tbs salt-reduced soy sauce 15g Thai basil, leaves picked


Method

Bring a large pot of water to boil. Add noodles and cook according to packet instructions. Drain and rinse under cold water.

Meanwhile, heat a large frying pan over medium-high heat. Add oil and chicken. Cook, breaking mince up with a spoon, for 5 minutes or until browned.

Add finely chopped chilli, ginger, garlic and lime zest, and cook for 2 minutes or until fragrant.

Add broccolini and cook, stirring occasionally, for 2 minutes or until tender. Add soy sauce, juice of zested lime and half of the Thai basil leaves and stir to combine. Divide noodles and mince amongst bowls. Top with remaining basil leaves and sliced chilli. Serve with lime wedges
