Healthier Banana Pancake Bites

A great change up for your snacks ladies, especially on the weekends when you may have a little more time to cook. I am going to give this a try with some frozen berries as well so I will keep you posted!



What you'll need:


2 bananas, cut into 5mm-thick rounds

1/2 cup wholemeal plain flour or gluten free flour

1/2 tsp baking powder

1/3 cup lite milk or coconut, almond

1 free range egg, lightly beaten

5ml olive oil cooking spray

1/2 cup light Greek-style yoghurt

2 tsp honey


Method:

Sift flour and baking powder into a large bowl. Make a well in centre. Add milk and egg, then stir gently until just combined. Stand for 15 minutes to rest.

Lightly spray a large non-stick frying pan with oil and place over medium heat. Working in batches, coat banana in batter, then place in pan. Cook for 2 minutes or until bubbles appear on surface. Flip and cook for a further 1 minute. Transfer to a plate and cover to keep warm. Repeat with remaining banana and batter.

Serve pancakes with yoghurt drizzled with honey.
