Buffalo Chicken Stuffed Sweet Potatoes

Ingredients  

6 medium-large baked sweet potatoes

500g cooked shredded buffalo chicken (recipe below)

2-4 Tablespoons blue cheese crumbles - I prefer feta or melted mozzarella

2 Tablespoons diced red onion, or pickled red onions

2 Tablespoons pickled jalapeños, optional

2 Tablespoons ranch dressing - or sriracha mayo (see below for ranch dressing)

¼ cup sliced green onions

2 Tablespoons chopped coriander, for garnish, optional

Hot sauce, optional


Instructions 

Cut open baked sweet potatoes and top with warm shredded buffalo chicken.

Top with ½-1 Tablespoon cheese crumbles, ½ Tablespoon red onions (or pickled red onions), ½ Tablespoon jalapeños, a drizzle of ranch dressing, 1 Tablespoon green onions and ½ Tablespoon cilantro.

Add an extra drizzle of hot sauce if desired and enjoy!


PS: little pt note from me to you, If you train in the AM prep this for lunch, if you train in the PM prep this for dinner but add an extra 1 cup worth of salad veggies to this dish making it up to 400cals total!

Slow Cooker Buffalo Chicken

Serves 6 portions same as recipe above (each serve is 160cals - P = 27g) your total cals for this dish and above are already added together but incase you wish to remake this and do chicken wraps ect you have the serve protein and cals.


Ingredients  

1kg boneless skinless chicken breast

3 Tablespoons organic ranch dip mix

½ cup "clean" buffalo sauce, plus more if needed (store bought from shops)


Instructions 

Add chicken, ranch dressing packet and buffalo wing sauce into your slow cooker.

Cook on high for 3-4 hours or low for 6-8 hours, or until chicken is cooked through and easily shreds with a fork. Remove chicken from slow cooker and shred using two forks. Place back in the slow cooker, toss with any additional sauce if desired and serve.


Vegan Ranch Dressing

Ingredients  

1/2 cup raw cashews, soaked 4-6 hours or overnight

1/2 cup fresh water

2 teaspoons apple cider vinegar

1 teaspoon dried dill

1 teaspoon dried parsley

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon sea salt

pinch of black pepper


Instructions 

  • Soak cashews by adding to a large bowl or glass and covering with water by at least 2 inches. Once cashews are soft, drain and rinse.

  • Add drained cashews into a high powered blender or food processor with 1/2 cup fresh water, apple cider vinegar, dill, parsley, garlic powder, onion powder, salt and pepper.

  • Blend dressing until completely smooth. Makes about 1/2 cup.
