Baked Oats with Blueberry Lava


Serves 1


Ingredients

1/2 cups rolled oats 1/2 cup milk 1/2 tsp baking powder 1/2 tsp vanilla extract

1/2 tbs white chia seeds 1/4 tbs maple syrup 1/4 ripe banana, mashed 63g blueberries 1/2 cups light Greek-style yoghurt or coconut yoghurt (to serve)

Method

Preheat oven to 210°C/190°C fan-forced. Lightly grease a 18cm (7cm deep) round ovenproof dish.


Place oats, milk, baking powder, vanilla, chia seeds, syrup and banana in a medium bowl and stir until combined. Stand mixture for 10 minutes.


Meanwhile, bring blueberries and 1/2 cup water to the boil in a medium frying pan over medium heat. Reduce heat to low and simmer, uncovered, for 10 minutes, squashing half the blueberries gently with a fork, or until sauce has thickened. Remove from heat. Reserve 1/4 cup blueberry mixture.


Spoon half the oat mixture into dish. Make a well in the centre of oat mixture and spoon remaining blueberry mixture into well. Carefully spoon remaining oat mixture over blueberry mixture, then drizzle top with reserved blueberry mixture.


Bake for 30 minutes or until slightly risen and top is lightly golden. Serve immediately with yoghurt.
