Steamed fish with melon salsa



15m prep | 30m cook | 4 servings


You will need:

6 baby potatoes 2 x 175g ling fish fillets 1/8 rockmelon, peeled, finely chopped (see Note) 200g seedless watermelon, peeled, finely chopped (see Note)

1/2 long red chilli, deseeded, finely chopped

1 tsp finely chopped basil

1 tbsp extra-virgin olive oil, plus extra to drizzle

1 tsp lime juice


Method:

Step 1 Steam potatoes in a large steamer over a saucepan of boiling water for 15 minutes. Season fish and place each fillet on a small piece baking paper. Place fish on potatoes. Steam potatoes and fish for another 15 minutes or until potatoes and fish are cooked.

Step 2 Meanwhile, combine melons with chilli, basil, oil and lime juice. Season and gently toss to coat.

Step 3 Place fish and potatoes on 4 serving plates. Spoon over melon salsa and drizzle with extra oil if you like.
